Day #1

I love Saturdays! Especially productive ones! Our kids let us sleep in until 9am, then we went to a few yard sales and got some great stuff. One of the items we got is a cookbook for kids where I can hide veggies in the food by pureeing it. My girls aren't picky at all - they'll eat anything! My 21 month old son is a little picky when it comes to textures, so I thought I'd give it a try!
Then, I hit my local Farmers Market in Saratoga. I love buying fresh, organic produce from local farms! It is more expensive, but all in all - I think it's worth it. For $35 I got 2 bags of mixed salad greens (arugula, romaine, spinach, etc.), a quart of fingerling potatoes, a pound of asparagus, 4 apples, scallions, parsley, a bunch of radishes, and some cider donuts and apple cider for the kids.
I also picked up a ton of organic produce from Hannafords - Kiwi, sweet potatoes, bananas, onions, green peppers, yellow and green squash, cauliflower, spinach and avocado. My fridge is bursting at the hinges! lol :)
After I ran a few more errands, I brought the kids home and started prepping my purees for this weeks meals. In less than 2 hours, I was able to puree the spinach, cauliflower, sweet potatoes and avocado.
I made a nice salad for dinner (with leftover roasted turkey on top for the hubby and kids). To my DELIGHT - my Son gobbled his down!
All in all - the eating today has been easy! A few days ago I discovered that my favorite Cliff Bars are vegan! They are so good and very filling. I had one for breakfast and I didn't get hungry for a few hours after.
I feel good today - energetic and excited to begin this journey!
